
Country Loaf
A plain round loaf of bread flour, water, yeast and salt, shaped by folding the corners in to build tension. Baked under its lid, the Ultra Pro works like a cast-iron pot: the steam from the dough stays inside and the loaf rises well before the crust sets.

Method
Mix the flour and salt in a 4.5 l mixing bowl. Make a well, add the yeast and the lukewarm water, and stir with a mixing spoon from the centre outwards, drawing in the flour gradually.
Turn the dough out and knead it hard for 5 to 6 minutes until smooth. Shape a ball, return it to the bowl, close it and leave it in a warm place for at least 30 to 40 minutes, until doubled.
On a lightly floured surface, knock the dough back and flatten it into a square. Fold the four corners to the centre, then fold the corners of the new square in again. Turn it over, shape a tight ball and place it in the Tupperware Ultra Pro 3.5 l, lightly oiled with a silicone brush.
Close the Ultra Pro and leave the dough to rise in a warm place for 40 minutes, until it almost touches the lid. Heat the oven to 240 °C (465 °F).
Brush the dough with water, slash the top with a tomato knife and dust with a little flour. Bake covered for 30 to 40 minutes.
