
White Sandwich Loaf
A soft, close-crumbed white loaf made with milk and a little butter, the kind used for sandwiches and toast. Baking it in the covered Ultra Pro loaf pan keeps the sides straight and the crust pale and tender.

Method
In a 4.5 l mixing bowl, mix half the flour with the sugar and make a well. Add the yeast dissolved in 25 ml (5 tsp) of the milk, then the water and the rest of the milk, and stir with a mixing spoon. Gradually add the remaining flour mixed with the salt and knead for 6 to 8 minutes, until the dough is supple, smooth and elastic.
Cut the butter into 3 pieces. Knead them in one at a time, waiting until each piece has disappeared before adding the next. Do not add extra flour.
Shape the dough into a ball on a lightly floured surface and put it in the cleaned, lightly oiled bowl. Close the bowl and leave in a warm room for about 1 hour, until doubled.
Punch the dough down on a lightly floured surface, form a rough ball and flatten it by hand into a rectangle of about 30 x 28 cm (12 x 11 in). Roll it into a log the length of the Tupperware Ultra Pro loaf pan 1.8 l and place it in the pan, buttered with a silicone brush. Cover and leave until the dough touches the lid, 45 minutes to 1 hour.
Heat the oven to 190 °C (375 °F). Bake with the lid on for 30 minutes, then remove the lid and bake for 5 to 10 minutes more.
