
Potato Bread
A soft bread with mashed potato in the dough, which keeps the crumb moist for several days, flavoured with a little nutmeg. The potatoes cook in the microwave in a MicroCook casserole, and the loaf proves and bakes in the covered Ultra Pro 3.5 l.

Method
Cut the potatoes into cubes and put them in the Tupperware MicroCook round casserole 1.5 l with the 200 ml water. Cover and cook for 15 minutes at 600 W, then leave for 5 minutes. Drain, keeping the cooking water, and mash with a potato masher, adding a little cooking water if needed to get 280 to 300 g of purée.
In a small bowl, combine the yeast, the lukewarm water and the sugar. Leave for a few minutes, then stir until the yeast has dissolved.
In a 3 l mixing bowl, combine the mashed potato, the yeast mixture, flour, margarine, milk, salt and nutmeg, and stir with a mixing spoon.
Knead the dough on the lightly floured pastry sheet for 6 to 8 minutes, folding it over on itself. It will remain sticky.
Lightly oil the cleaned bowl, add the dough and turn it to coat it with oil. Close the bowl and leave to rise for 1 hour at room temperature.
Knead the dough briefly to knock it back, shape it into a ball and place it in the Ultra Pro 3.5 l. Cover and leave to rise again until doubled, about 35 minutes. Heat the oven to 180 °C (350 °F).
Brush the top of the dough with a little water using a silicone brush.
Bake covered for 40 to 45 minutes, removing the lid halfway through.
