Courgette and Parmesan Terrine

A vegetable terrine of diced courgette with thyme, onion and garlic, held together by a savoury custard of bread, milk, eggs and Parmesan. The courgettes are precooked in the microwave in the Ultra Pro loaf pan to draw out their water, then the terrine bakes in the same pan.

Method

  1. Heat the oven to 180 °C (350 °F). Wash the courgettes, remove the seedy centre and cut them into cubes with the Tupperware Coup' Chef fitted with the 15 mm blade.

  2. Peel the onions and garlic and chop them with the thyme in the Quick Chef.

  3. Put the courgette cubes in the Tupperware Ultra Pro loaf pan 1.8 l, add the chopped onion mixture and stir with the silicone spatula. Season, close and microwave for 10 minutes at 600 W.

  4. Drain the courgettes in the double colander, then transfer them to the Mixing Bowl 3 l.

  5. Blend the bread, torn into pieces, with the milk, eggs and Parmesan in the TurboMAX. Add to the courgettes and mix.

  6. Oil the Ultra Pro, pour in the mixture, close and bake for 45 minutes. Remove the lid and bake for 15 minutes more.
