
Morteau Sausage Terrine
A country terrine of sausage meat and minced veal with parsley and shallot, with a whole smoked Morteau sausage running through the middle. The sausage is precooked in the Micro Vap' steamer, then the terrine bakes in the Ultra Pro loaf pan, first covered, then open to brown the top.

Method
Pour 400 ml (1 2/3 cups) cold water into the reservoir of the Tupperware Micro Vap' steamer. Set the lower colander on top with the Morteau sausage in it, cover and microwave for 20 minutes at 600 W.
Heat the oven to 200 °C (400 °F). Soak the bread in the milk. Put the peeled, halved shallots, the parsley leaves and the soaked bread in the TurboMAX and chop finely.
In the Mixing Bowl 3 l, combine the sausage meat, veal, the chopped mixture and the eggs, and mix with the silicone spatula until even. Season with salt and pepper.
Spoon the mixture into the Tupperware Ultra Pro loaf pan 1.8 l. Cut the ends off the Morteau sausage and push it into the centre of the meat, leaving the top just visible. Close and bake for 45 minutes, then remove the lid and bake for 15 minutes more.
Let the terrine cool, then refrigerate until the next day before turning it out.
Serve with a green salad with walnuts, gherkins and small pickled onions.
