Roasted Vegetable and Ricotta Toasts

Method

  1. Heat a fan oven to 190 °C (375 °F).

  2. Trim the courgette but do not peel it. Cut it into ribbons with the Tupperware MandoJunior set to position -1, discarding the first ribbon that is all skin. Peel and deseed the peppers and cut them into thin strips.

  3. In a small bowl, stir together the olive oil, thyme or oregano, salt and pepper.

  4. Spread the courgette ribbons and pepper strips on a sheet of baking paper, drizzle with half the flavoured oil and roast for about 30 minutes, turning them halfway through.

  5. Toast the bread. Mix the ricotta with the rest of the flavoured oil and spread it on the toast. Top with the roasted vegetables and sprinkle with lemon zest.

  6. Serve as a starter or with drinks, with a dressing of olive oil and lemon juice on the side.
