Courgette and Pea Flan with Rocket Pesto

A vegetable flan of small courgette dice and fresh peas in an egg and cream custard flavoured with homemade rocket pesto. The Voila dish goes in either the microwave or the oven, the Super Dicer cuts the courgettes into even cubes, and the SuperSonic Chopper makes the pesto.

Method

  1. For the pesto, put the pine nuts, the parmesan cut into pieces, the peeled garlic and the rocket in the Tupperware SuperSonic Chopper Tall and blend well. Add 120 ml of the oil, salt and pepper and blend again, adding more oil until the pesto is as loose as you like.

  2. Rinse the courgettes without peeling, halve them lengthways, scoop out the seeds and cut them into small dice with the Tupperware Super Dicer.

  3. Whisk the eggs, cream and 3 tbsp of pesto with the Tupperware Flexible Whisk in a 1 l bowl.

  4. Brush the Tupperware Voila 1.5 l rectangular dish with pesto using the Tupperware Silicone Brush, then spread the courgette and peas in it and pour the egg mixture over.

  5. Cook for about 20 minutes at 600 W, or 40 to 45 minutes in an oven heated to 180 °C (350 °F). The flan should be set but still slightly wobbly in the centre; it firms up as it cools.

  6. Serve warm or cold with the remaining pesto.
