Grated Apple Pancakes

Small, tender pancakes packed with coarsely grated apple, lemon and a touch of cinnamon. The batter is mixed by shaking it in a sealed Mixing Bowl, and a second bowl keeps the grated apple coated in lemon juice so it stays pale.

Method

  1. Peel and core the apples and grate them coarsely into the Tupperware Mixing Bowl 2 l. Add the lemon zest and juice, seal and shake so all the apple is coated, which stops it browning.

  2. Put the eggs, milk, sugar, flour, salt, baking powder and cinnamon in the Mixing Bowl 3.5 l, seal and shake from side to side 10 times, then alternate up-and-down and side-to-side shakes for 30 seconds. The batter should be quite runny.

  3. Add the grated apple and stir it in with a spatula until evenly mixed.

  4. Heat a lightly greased or non-stick frying pan of about 28 cm (11 in) over medium-high heat. Add 3 well-spaced spoonfuls of batter of about 30 ml (2 tbsp) each and cook for about 2 minutes per side. Repeat with the rest of the batter, about 5 batches in all.
