Mediterranean Salmon with Vegetables

Method

  1. In the Tupperware Thatsa Bowl, large size, toss the tomatoes, zucchini, eggplant and raisins with 1 tsp olive oil.

  2. Spread the vegetables in the base of the Tupperware MicroPro Grill, put the cover on in the grilling position and microwave on high power (1000 W) for 5 minutes. Return them to the bowl and stir in the rosemary and 1/4 tsp salt.

  3. Put the garlic, basil and oregano in the Tupperware SuperSonic Chopper Tall and pull the cord until finely minced, then stir in the remaining 1 tbsp olive oil.

  4. Brush the salmon all over with the garlic and herb oil. Place 2 fillets skin side up in the MicroPro Grill, cover in the grilling position and microwave on high power (1000 W) for 4 minutes. Sprinkle with salt, then cook the other 2 fillets the same way.

  5. Serve the salmon warm with the vegetables.
