
Pork and Sweet Potato Lumpia
Lumpia are Filipino fried spring rolls; here the filling is ground pork with garlic, sweet potato and cabbage. One Universal Fry Pan cooks the filling and then shallow-fries the rolls, and the Portioning Scoop measures the same amount of filling into every wrapper.

Method
Heat the vegetable oil in the Tupperware Universal Fry Pan over medium heat. Soften the onion and garlic, then add the pork, pepper and salt and cook for 5 to 8 minutes, stirring now and then, until no pink remains. Transfer to a bowl.
Put the sweet potato and half the pork mixture in the pan and sauté over medium heat until the potato is cooked through. Set aside.
Cook the cabbage with the rest of the pork mixture over medium heat for 3 to 5 minutes, until soft.
Combine both mixtures in the Tupperware Thatsa Bowl, medium size, and leave to cool completely.
Lay a wrapper on the work surface as a diamond. Place two small Portioning Scoops of filling near the bottom corner, fold that corner over, fold in the sides, brush the top corner with beaten egg and roll up tightly. Repeat with the remaining filling and wrappers.
Rinse and dry the pan, add the frying oil and heat over medium-low heat. Fry the lumpia 3 or 4 at a time, turning them, until golden on all sides.
Drain on paper towels for 2 to 3 minutes and serve warm or cold with a dipping sauce.
