Balsamic Vegetable Lettuce Wraps

Method

  1. Put the zucchini, bell pepper, onion and eggplant in the base of the Tupperware MicroPro Grill. Set the cover on top in the grill position and microwave at full power (1000 W) for 6 minutes.

  2. Turn the lid to the casserole position and pour off any liquid. Stir in the balsamic vinegar until the vegetables are coated, return the lid to the grill position and microwave at full power (1000 W) for 6 minutes more.

  3. Tip the vegetables into a medium Tupperware Thatsa Bowl and stir in the salt, parsley and goat cheese.

  4. Spoon a quarter of the filling onto each lettuce leaf and roll it up tightly. Serve warm or at room temperature.
