
Salers Cheese and Coppa Soufflé
A savoury soufflé made with Salers, a firm cheese from Auvergne, and thin strips of coppa. The white-sauce base cooks in two short bursts in the microwave directly in the round Ultra Pro 2.5 l, which is then washed, buttered and used to bake the soufflé.

Method
Heat the oven to 220 °C (425 °F).
Grate the cheese with the Tupperware Rotary Grater and cut the coppa into thin strips.
In the base of the round Tupperware Ultra Pro 2.5 l, whisk the flour and oil together with the Tupperware Flexible Whisk, then whisk in the milk gradually. Cover and microwave for 1 minute at 600 W. Whisk until smooth, cover and microwave for 30 seconds more at 600 W, then whisk again.
Season with salt, pepper and nutmeg, then stir in the cheese and egg yolks with the Tupperware Silicone Spatula. Transfer to the Tupperware Mixing Bowl 3 l and add the coppa.
Wash the Ultra Pro base, then brush it with the melted butter and dust it with the flour.
Whisk the egg whites to stiff peaks in the Tupperware Speedy Chef and fold them gently into the cheese mixture in two additions.
Pour into the Ultra Pro and bake uncovered on a low shelf for 10 minutes.
Lower the oven to 180 °C (350 °F) and bake uncovered for 25 to 30 minutes more. Serve the moment it comes out of the oven.
