Duck and Orange Terrine

A country terrine layered with strips of duck breast and smoked duck, bound with sausage meat flavoured with shallot and orange juice. The upturned lid of the Ultra Pro 3.5 l doubles as a water bath on top of the dish, so the terrine cooks gently without drying out.

Method

  1. Heat the oven to 200 °C (400 °F).

  2. Peel the shallots and chop them in the Tupperware Twister.

  3. Squeeze the orange with the Tupperware Citrus Juicer. In the Tupperware Mixing Bowl 3.5 l, combine the shallots, sausage meat, whole egg, egg yolk and orange juice, season with salt and pepper and mix thoroughly with the Tupperware Silicone Spatula.

  4. Trim the fat off the duck breasts and cut each one lengthways into 3 or 4 wide strips with the Tupperware Chef Series slicing knife.

  5. Spread a third of the sausage mixture in the Tupperware Ultra Pro 3.5 l. Cover with half the duck strips and half the smoked duck, then another third of the mixture, the rest of the duck and smoked duck, and finish with the remaining mixture.

  6. Arrange the orange slices on top, sprinkle with the cognac and press down firmly. Set the lid upside down on the Ultra Pro, pour 500 ml (2 cups) of boiling water into it and bake for 1 hour 30 minutes.

  7. Let the terrine cool, then refrigerate for at least 24 hours before slicing. Serve with a green salad, gherkins and pickled onions.
