Spiced Lamb with Spring Vegetables

Method

  1. Peel the onion and garlic. Halve the garlic cloves and remove the green centres, and cut the onion into 6 wedges, using a chef's knife on a flexible chopping board.

  2. In the Tupperware Premiaglass square roasting dish 3.2 l, mix the cumin seeds, ground cumin, ras el hanout, chilli, olive oil, onion, garlic, salt and pepper.

  3. Cut the lamb into chunks, turn them in the spice mixture and leave to marinate in the fridge for about 4 hours.

  4. Heat the oven to 180 °C (350 °F). Peel the vegetables and cut them into pieces if they are large.

  5. Mix the vegetables with the meat and roast for about 1 hour, stirring once or twice and adding a little water if the dish looks dry. Scatter over the snipped chives before serving.
