Toulouse Sausage Rougail

A Réunion-style rougail made with Toulouse sausages, red onions, paprika and a generous amount of fresh tomato. The Premiaglass casserole goes from microwave to oven, so the onions and sausage get a quick start at 900 W before the tomatoes finish cooking in the oven in the same dish.

Method

  1. Heat the oven to 180 °C (350 °F).

  2. Peel the onions, dice them with the Tupperware Super Dicer and tip them into the Tupperware Premiaglass casserole 2.1 l.

  3. Crush the garlic over the onions with the garlic press and add the olive oil. Cover and microwave for about 5 minutes at 900 W.

  4. Cut the sausages into chunks and add them to the casserole with the paprika, salt and pepper (a pinch of ground ginger is a good addition). Cover and microwave for about 5 minutes more at 900 W.

  5. On the flexible cutting board, cut the tomatoes into large cubes with the tomato knife. Add them to the casserole and fold them in gently.

  6. Cover and bake for about 25 minutes. Serve with rice from the Microwave Rice Maker, with a little chilli paste or harissa on the side for anyone who wants more heat.
