Baked Skate Wing with Capers
Skate is usually poached or pan-fried; here the wing bakes in white wine with shallot and lemon slices, then gets a spoonful of cream and capers for the last few minutes. The Premiaglass square dish is the right size for a large wing and becomes the serving dish.
