Apple and Salted Caramel Brioche Cones

Method

  1. Stir the yeast into the warm milk and leave for 10 minutes.

  2. Combine the flour, 40 g (3 tbsp) of the sugar and the salt. Add the yeast mixture, the egg yolk and the soft butter and knead for about 5 minutes into a smooth dough. Cover and leave to rise for about 30 minutes.

  3. Heat the oven to 180 °C (350 °F). Knead the dough briefly, roll it out and cut it into bands with the Tupperware Cornets Party strip cutter. Wind the bands around 4 cones.

  4. Brush with egg wash, then roll the cones in the remaining sugar mixed with the cinnamon. Bake for about 14 minutes, leave for 5 minutes and slide the brioches off the cones. Repeat with the rest of the dough to make 8.

  5. Cut the apples into chunks and microwave them for about 8 minutes at 600 W, stirring halfway. Drain, fold in the caramel gently and fill the brioche cones.
