Rice and Black Bean Stuffed Peppers

  1. Cut around the stem of each pepper with a small knife and pull it out with the seeds attached. Discard the seeds and keep the stems to use as lids.

  2. In the Tupperware Thatsa Bowl medium, combine the tomatoes, onion, beans, rice, cumin and cheese.

  3. Fill the peppers with the rice mixture and put the stems back on top. Pour 400 ml (1 3/4 cups) water into the base of the Tupperware Smart Multi-Cooker, place 3 peppers in the shielded colander, set it in the base and cover.

  4. Microwave on high power (1000 W) for 10 to 12 minutes, until the peppers are soft. Cook the remaining 3 peppers the same way with fresh water.

  5. Serve with the sour cream and a little extra cheese if you like.
