
Salmon-Stuffed Zucchini on Rice
A complete meal for two cooked in a single dish: zucchini halves stuffed with chopped salmon and soft cheese, sitting on rice that absorbs the stock as everything cooks. The MicroPlus 1.5 l oval dish holds the zucchini snugly, and the chopper makes the filling from the trimmings.

Method
Wash the zucchini, halve them lengthways and scoop out the seeds with a spoon. Trim them so they fit across the width of the Tupperware MicroPlus 1.5 l oval dish, keeping the offcuts.
Put the offcuts and the peeled onion in the Tupperware SuperSonic Chopper Extra and chop. Add the salmon in pieces, the cream cheese, salt and pepper and chop coarsely.
Spread the rice over the base of the dish. Fill the zucchini halves with the salmon mixture and lay them on the rice.
Pour in the stock, drizzle with the olive oil, close the dish and microwave for 12 to 15 minutes at 600 W. Leave to stand for 5 minutes before serving.
