Thyme and Sage Roast Chicken

  1. Heat the oven to 425 °F (220 °C).

  2. Season the chicken with salt and pepper. In a small bowl, mix the butter, thyme, sage, rosemary, garlic and 1 tsp salt. Spread 2 tbsp of the herb butter over the skin, then push the rest under the skin and into the cavity.

  3. Put the chicken breast side up in the Tupperware Ultra Pro roasting pan and microwave on high power (1000 W) for 17 minutes. Baste with the pan juices and transfer the pan to the oven.

  4. Roast for about 17 minutes, until golden and an instant-read thermometer shows 165 °F (74 °C) in the thickest part.

  5. Leave to rest for 10 minutes before carving.
