Chicken and Lamb Couscous

A generous couscous for 10: chicken legs and lamb shoulder braised in spiced stock with lemon, onions, carrots, peppers, courgettes and chickpeas, served with fluffy grains. The Ultra Pro 5.7 l holds the whole stew and braises it in the oven with no need to watch a pot on the hob.

Method

  1. Heat a fan oven to 210 °C (410 °F).

  2. Cut the lemon into 6 wedges. Peel the onions and carrots. Deseed the peppers and cut them and the onions into large cubes; cut the carrots into chunks.

  3. Put the chicken and lamb in the Tupperware Ultra Pro 5.7 l with the lemon, onions, carrots, peppers, spices and oil. Stir with the Tupperware mixing spoon, then pour in the hot stock.

  4. Cover and bake for about 1 hour 15 minutes.

  5. Stir, then add the courgettes, trimmed and cut into thick slices, and the rinsed and drained chickpeas. Cover again and bake for about 30 minutes more.

  6. Towards the end, heat the water in the Tupperware MicroCook Pitcher 1 l for about 10 minutes at 600 W. Pour it over the couscous in the Tupperware mixing bowl 3.25 l, seal and leave to swell for 5 minutes.

  7. Season the couscous with salt and pepper, add the olive oil and fluff it up well with a fork to separate the grains. Serve with the meat and vegetables.
