Duck à l'Orange

A whole duck roasted on a bed of onion, carrot and herbs, then basted with a sweet and sharp glaze of orange, honey and vinegar. The Ultra Pro 5.7 l is large enough for a 2.5 kg bird and keeps it moist under the lid for the first hour, before the glaze goes on uncovered.

  1. Heat a fan oven to 200 °C (400 °F).

  2. Peel the onion and carrot and cut them into pieces. Put them in the Tupperware Ultra Pro 5.7 l with the bouquet garni.

  3. Season the inside of the duck with salt and pepper and set it on the vegetables. Cover and roast for about 1 hour.

  4. Zest and juice the oranges with the Tupperware citrus juicer. Put the zest and juice in the Tupperware MicroCook Pitcher 1 l with the vinegar and honey and microwave for about 5 minutes at 600 W.

  5. Pour the orange glaze over the duck and roast uncovered for about 20 minutes more, basting from time to time.

  6. Carve the duck and serve with the cooking juices strained through the Tupperware sieve, and fresh pasta on the side.
