Cod with Vanilla Butter and Mangetout

Method

  1. Soften the butter in the Tupperware MicroPlus Pitcher 1 l for 30 to 45 seconds at 360 W, without letting it melt. Split the vanilla pod and scrape out the seeds. Whisk the seeds and the sherry vinegar into the butter with a flexible whisk, then season lightly with salt and add pepper.

  2. Pour 400 ml (1 2/3 cups) water into the reservoir of the Tupperware Micro Vap' steamer.

  3. Top and tail the mangetout, rinse them and put them in the lower colander. Set it on the reservoir.

  4. Arrange the cod in the upper colander and brush it lightly with vanilla butter using a silicone brush. Stack the upper colander on the lower one, put the lid on and microwave for 16 minutes at 800 W. Leave to stand for 5 minutes.

  5. Serve the cod and mangetout with the rest of the vanilla butter.
